Recipe: Turkey and Rice Soup

Need something delicious to make with those turkey leftovers from your Thanksgiving Day feast? Here is a healthy and delicious recipe for Turkey and Rice Soup.

The Stock


  • 1 turkey carcass
  • 1 large onion, halved and skin left on
  • 1 large carrot, roughly chopped
  • 1 stalk celery, roughly chopped
  • 1 head garlic, halved
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried thyme
  • 2 bay leaves
  • salt and ground black pepper to taste

The Soup


  • 2 large onions, diced
  • 2 carrots, diced
  • 2 stalks celery, diced
  • 2 cloves garlic, minced
  • 1 teaspoon poultry seasoning
  • 1 teaspoon dried rosemary
  • 1 teaspoon onion powder
  • 1 teaspoon dried dill
  • 2 cups cooked brown or wild rice


Making the broth
Combine turkey carcass, 1 whole onion (halved) with the skin left on, 1 large chopped carrot, 1 stalk of chopped celery, 1 teaspoon rosemary, thyme, bay leaves, salt, and pepper in a large pot. Add enough water to completely cover all the ingredients. Bring the uncovered mixture to a boil, cover pot, reduce heat, and simmer for an hour.
Remove the turkey carcass from the water and pull the remaining meat from the bones and dispose of the carcass. Remove all of the vegetables and bay leaves from the stock using a slotted spoon or strainer. Chop the meat from the carcass and any leftover pieces from the initial turkey carving into small pieces (removing any remaining skin and bones) and place in the refrigerator.

Making the rice.
Cook two cups of brown or wild rice, according to directions.

Making the Soup
Into the broth, stir diced onions, diced carrots, diced celery, minced garlic, poultry seasoning, rosemary, onion powder and dill into stock and bring to a boil. Reduce heat, cover pot, and simmer for about 20 to 30 minutes or until vegetables are tender. Next, add the cooked rice and turkey meat to the soup and season with a salt and pepper. Cook for about 5 minutes, or until turkey meat and rice are warm.

Pro tip: Keep leftover turkey refrigerated until ready to use. If you plan to make the soup more than two days after cooking your turkey, put the turkey carcass and any leftover meat into the freezer until ready to use.
